Which version of Exchange?

5.5 - go to the mailbox properties in Exchange Admin. There should be a tab
that defines the storage limits. Individual limits will override the
defaults.

2000/2003 - go to the user properties in Active Directory and go to the
Exchange General Tab, Storage Limits button. Untick the box to use mailbox
store defaults, and put in the new limit you want.

on the Exchange General tab, click "Storage limits"...on Exchange 5.5, go to
the limits tab on the mailbox properties...
