Assuming mail routing from Exchange 2007 to Exchange 2003 works already:
- Test inbound mailflow using telnet. Make sure the Receive Connector you're
going to direct the inbound smtp traffic to accepts mail from anonymous
senders.

- For outbound mail: Make sure there's a Send Connector for address space *.
