I have a Windows 2008 Std Server installed with Exchange 2007 on it running
Roll up 3. It has 4GB of RAM and 8GB page file. What happens is the memory
usage just keeps going up over time (a day or two) then the transport service
stops and the server needs a reboot to become functional again.

Server only has 15 mailboxes on it right now for testing purposes.

Any ideas what I have done wrong?

I assume these are the 64-bit editions (even though you're using them for
testing purposes) and that you're running Exchange Server 2007 SP1 Update
Rollup 3 and not the Update Rollup 3 for the RTM version.

Do you have any idea what process(es) are consuming all your RAM? It should
be easy to trace if it takes a day or two before the server stops.

Yes all 64 bit versions. Rollup 3 was applied last night through Windows
2008 Microsoft Updates.

Right now the top memory users after 2 hours of up time are

Edgetransport 315MB
Then I have 4 FSCTransportScanner.exe *32 (think these are to do with
ForeFront) 175MB
Then FSCRealtime Scanner 170MB
Then store.exe 160MB

It's at 2.61 total used out of 4.

Stupid me forgot to look at the process list before I rebooted it, but next
time I will.

I had the same issue with our production server on 2003, but I have forgot
to set the page file.

When did this issue start happening? Or has it always occurred?

Server is only 4 days old so always. :)

Okay. :) I would certainly add some PerfMon counters to watch the memory
usage over time while you wait for another hang. Take a look at the post
below from the Performance Team at MSFT for a GREAT overview.

http://blogs.technet.com/askperf/archive/2008/01/25/an-overview-of-troubleshooting-memory-issues.aspx

They also have some good posts on memory management issues in general linked
below.

Report back what you find and we can dig around from there.

Also, do you have any third-party software installed on the Exchange box?
Virus scanners, etc.?

It would be a good idea to run the Exchange Server Best Practices Analyzer
if you haven't already.

Re: Exchange 2007 on Windows 2008 uses all RAM until system needs a re by Dana

We had the same issue.
The answer can be found here.

://forums.msexchange.org/m_1800431107/mpage_1/key_/tm.htm#1800431107

Or by following the instructions in this Microsoft KB
http://support.microsoft.com/kb/815372
(it is the same for exch 2007 as exch 2003)

You will need to change the msExchESEParamCacheSizeMax value.

This resolved the issue for us.
Good luck!
Dana
