I have an Exchange Server that started life as Exchange 2000 on Windows
Server 2000, and has since been upgraded to Exchange 2003 Standard Sp2 on
Windows Server 2003 Sp1. It is a single Exchange environment, with the
Exchange Server also doing duty as a redundant DC/DNS/DHCP/WINS server. The
machine is also still in Mixed Mode. Given that I have a single Exchange
Server, does it make sense to change mode?

Yes. There is no downtime and it takes moments.

I'm not Nick, obviously (not all of us can be so fortunate) but the main
thing you'll notice is that you can then use mail-enabled security groups to
set permissions on public folders. Also, you will lose the option to have
Exchange 5.x servers, but it doesn't sound like you need that anyway.
