You cannot do an In-Place upgrade of Exchange 2003 to Exchange 2007.
Exchange 2003 is 32 Bit
Exchange 2007 is 64 Bit
SBS is Windows 2003 Std 32 Bit ONLY
( the next version will include and support Exchange 2007 and so will be 64
Bit ONLY )
The 32 Bit version of Exchange 2007 that is the Demo version cannot be used
in production.
In addition, Exchange 2007 comes in 5 Server / Components,
Edge Server ( optional, but which MUST reside on it's own 64 Bit O/S Server
Outside of the AD Site ( separate Forest or Workgroup )
Hub Transport
Mail Server
Client Access Server
Unified Messaging Server
( these last 4 may reside on one or more physical servers )
Short story is that you cannot "upgrade" SBS Exchange 2003 to Exchange 2007.
You can install an Exchange 2007 server(s) in the SBS Forest on separate
hardware.
This will break the SBS Wizards and also require separate CALs for both the
Windows 64 Bit Server and Exchange 2007.
If you -do- wish to do this you can find migration details on the
www.microsoft.com/exchange website.
( effectively - and simplistically - you would install the Exchange 2007
server in the AD SBS forest, move the mailboxes and then uninstall the
Exchange 2003 server )
You can uninstall the Exchange 2003 server from SBS by going to Add/remove
programs - Small Business server and change the installed components.
HOWEVER: I wouldn't advise it. You'll completely break SBS.
If you -must- go to Exchange 2007 then I'd suggest that you Swing/Migrate
out of SBS.
