Where can I set an administrative e-mail address, so that if an e-mail
is sent to a recipient all e-mail message will be forwarded to the
Exchange administrator?

If you want to record all communications in your organization, you can use
journaling.

I'm using exchange 2000... Journaling is not convered in 2000, only in 2003.
