How the heck do you turn HTML off for incoming messages? In Outlook you have this function, but I can't seem to turn it off in Entourage...

You can only set what you send, but it's easy to toggle it off with the
ab/ab icon in the HTML tool bar.

Unfortunately, Entourage does not have the ability to force all incoming
HTML messages to plain text.

Please be sure to let Microsoft know you'd like to see this feature in
future versions by using the Help --> Send Feedback mechanism in any
Office application.

Download & install Allen Watson's free "Strip HTML" script. You can then
run the script on an HTML message to remove the HTML content. You can then
also assign it as an action for a rule to run automatically on incoming
messages if you wish.
