I noticed that when I sort by subject, "Re:" is correctly ignored, but the
German "AW:" is not. How do I get Entourage to recognize "AW:" (and other
language variants) as well (like Outlook does on PC)?

I forgot to mention that I am using Office 2004. I found some
references for fixing the old System 9 version, but those would work
anymore.

It's a bug. Somehow I thought that had been fixed in a recent update like
11.2, but evidently not since you're using 11.2.3. Are you actually using
the German version of Office 2004 11.2.x (where I thought this bug had been
fixed), or another version (like US English), which cannot be expected to
know what "AW:" from German senders means?

I am using the English (US) latest version. But if Outlook can do it on
PC, then why can the Mac version?

And after being on many lists, AW: and RE: are the only two I've seen.
At the very least, I would think the European languages would be
supported.
