I guess I must be dense- does Entourage have a feature for and "out of
office" message like outlook did? Can anyone point me toward it?

Requires creating a rule. See

Be very careful with this, it's easy to send OOO replies to places
they shouldn't go (junk mail, mailing lists, etc.).
