It's a known bug, if erratic. There's nothing that can be done about it
until the bug is fixed.
I believe it's yet another manifestation of the things that go wrong after
you've viewed a complex HTML message. If you quit and relaunch Entourage and
try to make an event before viewing messages, I think it will be OK. After
viewing your first complex HTML message, the problem will be back. If this
is true, and it matters more to you than seeing tables and pictures in
advertising-type email messages, you could always turn off viewing complex
HTML in Preferences/Security, and relaunch one last time.
