I have not been able to find a feature in Entourage that allows me to
compose signatures with hyperlinks embedded in them (mailto, web
addresses, etc.). How can I do this?

Just type the URL directly into the signature. Entourage does not allow you
to embed a URL onto arbitrary text (e.g. <A> links).

But you can using the "Make Hyperlinks X" script at

MacScripter.net <http://macscripter.net/scriptbuilders/>

It even lets you save regular hyperlinks (such as you might include in your
signature) which it will convert to display hyperlinks automatically without
having to type them out every time.
