I had to wipe out my old Entourage program and reinstall
it. However when following the Import data from the
menu, it does not clearly give an option for importing
data that is Entourage X. I have the old identity folder
saved but don't know if I should simply replace the new
identity folder with the old one. Somehow it's not
working. Any help would be greatly appreciated.

You can't import from the same version. Just replace the Identity folder. If
you have used the old one be sure to rename so it doesn't get replaced. You
can then switch to the newest identity, drag any folder to the desktop with
mail, switch back to your old identity and drag in messages from the
desktop.
