There is no workaround. Simply do not press Command-Enter or
Command-Return. If you accidentally press it, immediately press
Command-Period to terminate the network process of sending the message.

The "Send Now" button (same as Command-Enter or Command-Return) closes the
message window and sends the message to the mail server immediately. The
"Send Later" button (same as Shift-Command-Enter or Shift-Command-Return)
closes the message window and places the message in the Outbox folder under
"On My Computer." The message is then ready to be sent, and will be when
(a) a schedule is launched with the action to Send All (like the Send &
Receive All and Send All schedules) or (b) you open the message from the
Outbox and press the "Send Now" button.

Just press the "Send Later" button (or Shift-Command-Return) when you
compose mail. It will then stay in the Outbox until the schedule runs.
Keep in mind that the schedule runs every ten minutes. This means that if
you press the "Send Later" button nine minutes and fifty seconds into your
Entourage session, your message will be sent ten seconds later. So all
messages in the Outbox will be sent every ten minutes regardless of when
they were put there.
By the way, there's no need to have the "Send All" schedule running every
ten minutes if you have the "Send & Receive All" schedule running at the
same interval, because the latter does the same as the former as well as
retrieving mail.
