You should be able to see the signature button on the toolbar of a new mail
message window. It's directly to the left of the "Options" toolbar button.
If you use OS X 10.3 or later, you can create a keyboard shortcut for
signatures. See this help article for instructions on how to create your
own keyboard shortcuts in OS X 10.3 or later. For the application, select
Microsoft Entourage, and type the name of the signature as the menu command.
