Twice today I've opened Entourage 2004, only to find myself back at
Square One, no messages, nothing, only "Welcome to Mac Team"! I have
to begin as if I've never opened the program before. WHY does this
happen? And HOW can I avoid it?

Under OS 9/Office 2001 the correct location for your identity folder is in:

<Startup Disk:Documents:Microsoft User Data:Office 2001 Identities:

Under OS X/Office vX it's:

~/Documents/Microsoft User Data/Office X Identities/
(where '~/' is your current login's 'Home' directory)

Under OS X/Office 2004 it's:

~/Documents/Microsoft User Data/Office X Identities/
~/Documents/Microsoft User Data/Office 2004 Identities/

Make sure you put your main identity folder in there, then if you still
can't see it when you restart Entourage, try to change identities (it's
under the File menu) and see if your identity shows up in the list.
