File/Export/Archive/Project
There is an option in the Archive process to delete the original from
Entourage if you wish. If you ever need to go back into it, just import the
Archive.
Until you're ready to archive, you can go into the Project, click
Properties, and uncheck the Due Date, if you don't want to be told you're
ever more overdue.
