I am trying to get some of my staff's Entourage to sync with Exchange
2007. I can get it to send out email fine, however, I am having a
problem when I try to receive.
We are using IMAP b/c my hosting company informed me Entourage 04 will
not work with rpc over http or mapi.
I have my IMAP server inputted with correct username and password,
Using IMAP port 143.

However, when Entourage tries to connect we receive the following
error: "Command received in invalid state"
I'm not sure where I am going wrong. I'm pretty sure I have the IMAP
server correct...listed the same as SMTP server and email sends out
fine.
Anyone have any ideas?

Entourage can connect to Exchange either through IMAP (as you do) or
WebDAV (over the same port you use when you connect through your web
browser). You could try to setup Entourage the regular way instead
(Over WebDAV). Just enter the address of the OWA server as your
Exchange server.

My only problem there is I can not enable IDAP on my exchange server
because it is not configured as the domain controller.

You mean IMAP??
That's OK. You don't need it at all if you use a regular Exchange
account in Entourage 2004 since it uses WebDAV.

Have a look at this page on The Entourage Help Page for instructions...

You can use any available LDAP server you have available but it's not
required for sending or receiving mail. In Windows Active Directory
environments your LDAP server would specifically be a Global Catalog
Server, not just a Domain Controller.
