Putting an alias to Entourage in the ~/Library/PDF Services folder will give
you a different command that does it (I renamed the alias "Send PDF with
Entourage", so that's what shows up in my menu).
However, perhaps Scott's script covers some of the shortcomings? Like file
naming, which comes out odd.

PS. Notice that the default choice, at least, in the US version, says Mail
PDF, not Send PDF. It means Mail literally. This is not like a "mail-to"
link, which calls the default email application--in this dialog, the
specific email app must be called.
PPS. Wow, I just noticed the "Save PDF to Web Receipts" command. How
thoughtful of Apple! Too bad I don't want a freaking Web Receipts folder in
my Documents, especially not at top level. Not so thoughtful.
