I know what you mean. It's nice being able to mess with the headers
directly. But I don't think Entourage allows this. On the other hand, I
use this approach - two nearly identical "accounts", differing in just
one respect that I have reason to switch occasionally - and I don't find
it clunky.

I don't know anything about Exchange, but this is why I said you should
be careful not to let both accounts check for mail automatically. If you
never check mail with account B, but only use it for sending, then I
would think the Exchange server would never know about it (though I am
just guessing).
