Does anyone know a method to recover deleted mail that has been deleted
from trash, on an operational copy of Entourage on osX?
Any suggestions are appreciated.

Sorry, I don't think that is possible.

You may be able to open the Database (~/Documents/Microsoft User Data/Office
2004 Identities/<Your Identity>/Database) in a text editor and search for
the message. Copy the entire message (headers included) into a new plain
text document, and save it as a .eml file. You can then drag it into
Entourage to import it. That won't always work though, especially if you've
added a lot of new data since you deleted the message(s).

(replace "Office 2004 Identities" with a different version if you don't have
Entourage 2004)

if you're on exchange server there is a way to 'recover deleted
messages' but the feature needs to be manually activated on whatever
folder you are rescuing (it may be on by defult for the deleted items
folder). note that this feature does not have to be active before you
delete the messages accidentally as long as your exchange server
provides support for this (ours does).
