I am presently moving to another company and wish to take all the email
contacts I have and send one message to them all. In the past, when I
have tried to send an email to more than about 100 people, Entourage
has not allowed me to. This email will go out to about 120 in one
group and about 550 in another. Is there something that I'm not doing
or not doing correctly that keeps me from sending this to everyone
under one - in this case two - addresses?

Entourage has no limit. You should contact your mail provider to ascertain
the maximum number of recipients per message and note it. You can use the
free "Split Recipients" script to send a mass e-mail in separate mailings
automatically:

Split Recipients for Entourage 2001

Split Recipients for Entourage X

Do these scripts work when there is one recipient and hundreds of BCC
recipients? If not, do you have any suggestions?

Is there a script that will send out a separate message to every person with
a certain category? Exlcuding other caegories as well?

... a script that sends to every person within an Entourage group?

I believe so, though I am no expert in the intricacies of that script.

You could use Paul Berkowitz's "Category Group" script to create a group
containing all recipients, address your mail message to that group, and then
use the script "Separate Group Messages" to send the message individually to
all recipients.

Individually? Unless you mean individually, you wouldn't need a script. If
you do, use Paul Berkowitz's "Separate Group Messages" script.
