Aside from assigning a message to the junk folder, does the junk e-mail
button in Entourage 2004 create some sort of filter such that if I ever
receive another message from the same address it will be immediately
filtered to the junk folder? I've checked Entourage help and it doesn't
have any information about this and the way I see it, if it doesn't do this
it's about as useful as a simple delete button...

No. Such a filter would be useless, because junk email rarely comes from the
same address twice. Plus, those addresses are forged.

It *does* remove the address from your Most Recently Used addresses list
(http://www.entourage.mvps.org/glossary/mru.html), so it won't pop up when
addressing messages.
