My Entourage 2004 has the option to view "internet headers" and "source"
for emails under the view menu. When looking for the same at a friend's
house with Entourage 2008, I could not find these options. Am I missing
something?

In 2008 these moved from the View menu to the Message menu.

You can find any menu item by using the box under Help in the menu bar.
Entourage 2008 only. It will show you where the item is located. See this
