Is there any way to have some control over the margins in an email
that's being sent HTML? I hate the way the sentences reach all across
the wide screen.

Entourage's HTML support is very limited. It's not "complex" HTML that
you would associate with website formatting, tables, CSS or
hyperlinking. Instead, Entourage supports just "simple" HTML such as
font styles, left/center/right justification and rules.

Please be sure to let Microsoft know you'd like to see this feature in
future versions by using the Help --> Send Feedback mechanism in any
Office application.

You can manually insert line breaks by selecting the HTML text and going to
Edit > Auto Text Cleanup > Rewrap Paragraphs (or by clicking the small
button immediately above the Preview Pane or in the toolbar). There's no
way to control how wide the margins are for flowed text though.
