I have selected a default font for my e-mails in the preferences
window. How do I select a default color?

This is what Paul Berkowitz posted here the other day to a similar inquiry:

You could check out the "Message Template X" script on

MacScripter.net <http://macscripter.net/scriptbuilders/>

which allows you to do something like this, and more.

You can't. However, you could check out the "Message Template X" script on

MacScripter.net
