The best way, which only works in Entourage X, is to turn on HTML formatting
(Format -> HTML), place the insertion point where you want the picture to
show, and then drag the image file from the Finder into the composition pane
of the message window. The same can be done for a signature window. Though
the image might appear in the attachments pane when received by Entourage,
it will appear inline as well.
Another option would be to create your HTML source in an outside editor,
upload your image to the web, and send the HTML source as a message, but
that won't display properly in some clients depending on
capabilities/settings, and is much more trouble than it's worth.
