I'm pretty sure that can't be done. You could save the signature as a
template in Word and then compose your messages there & send them as mail
messages (File > Send To > Mail Recipient (as HTML)), but that's a lot of
work for just highlighted text.
Be sure to share your feedback with Microsoft. In Entourage X or 2004, go
to Help > Send Feedback on Entourage. Otherwise, click on this direct link
