I want to setup an exchange server at my office. I have a few field staff
with iBooks with OS X. Is there any way for them to use Entourage to connect
to a remote exchange server? Can I use MAPI, or connect them with a VPN?

If you expose IMAP, DAV, and LDAP on your server to the internet, your users
can connect directly to your server even when they are remote. If you have a
VPN solution then you wouldn't need to expose IMAP, DAV and LDAP to the
internet. Entourage does not support MAPI.
