You shouldn't need to configure proxy settings if your Exchange Server
is internal to your network. Is this a hosted Exchange Server outside
your network?
Entourage itself does not have any proxy settings. I don't know of any
email applications that do. If your Exchange Server is hosted outside
your company network then follow these instructions for configuring
Entourage to use your Exchange Server's OWA address
