I noticed in Entourage that when you delete a message instead of
moving to the message below it, the program moves to the message above
it. This is completely different than any program I've ever worked
with. Is there a way to change this setting?

Not that I know of. However, there are some keystrokes you can use to
instruct Entourage to behave differently.

OPTION+Command (?)+[ Delete the current message and display the previous
message.
