I am posting this in the hope that someone will be able to assist me finding
some information regarding how to configure the 'archiving' function in
Entourage 2004.

I have three Apple users, who all use Entourage 2004 to connect to their
mailboxes which are currently held on a server running Exchange 2000 Server
(will be migrated to a server running Exchange Server 2003). I am looking
to setup some form of archiving, so they can archive the old Entourage
data - in the same way as you do with the 'Auto Archive' feature in Outlook
2003 on a Windows XP client.

I am very new to supporting Apple clients, so any information will be
greatly apprecaited..

Hum.... Now as easy or automatic....
The way I do it is that I trasnfer some mail to a folder "on my
computer" once in a while.
This deletes them from the server and stores them on my Mac. I can even
create an archive to a file.
Now it's not automatic....
I gess you could create an APpleScript to do it and even use something
like Cronnix to run it n regular intervals, but it sure won't be like
the "Auto-archive" feature you have unde Windows.
