I am using the Entourage Exchange and ever since I set it up, my mail comes
in automatically and not by my set up schedule. Any ideas?

Check the Exchange settings. You probably have the LiveSync option
active. This makes the application get the new mails automatically as
they come in the Exchange server.

In case you don't know what option he's referring to (since the Exchange
account options use different terminology), here's what you have to do: Go
to Tools -> Accounts, open your Exchange account, click the "Mail" tab,
click the "Advanced Receiving Options" button, and then uncheck the option
to "Automatically synchronize Inbox with the Exchange server". Then click
OK and you should find your problem resolved.
