It was working fine up until a few days ago, but now everytime I click
on a link in the body of a message Entourage launches Adobe Illustrator
instead of Safari. This is really annoying! I have tried to find a
preference that will let me select the program that it should be
launching, but I have had no luck. Any ideas?

Don't know if this will solve your problem, but bizarrely enough the
setting for your system-wide preference for browser is in Safari's
preferences. I say "bizarrelly" because it strikes me as very odd to
set a preference in Safari that leads to my default browser being
Firefox, as I have.

In Safari, go to Safari > Preferences. In the toolbar, click "General", and
in the pop-up menu next to "Default web browser", click "Select?".
Re-select Safari, and close the window.

Sara, you mention that it worked fine "up until a few days ago" -- had you
run any software updates just prior to when the problem began? Any changes
at all? Mickey's solution should work, but something had to have triggered
the change in behavior.

I use Carl Lindberg's RCDefaultApp 1.2.1 to manage defaults, but this may be
more of a solution than you really need.
