³random² quote, different each email.

I was thinking of doing something similar with my business email, only with
an information tidbit (quote).

Has anyone run across a script to do this sort of thing, or know of how this
can be done from Entourage?

Create your signatures in Tools > Signatures, and make sure you check the
little box next to each one you want to use in your random selection.

Edit your account, and under the "Options" tab, you will see the signature
pull down. Select "Random" and you're all set!
