Once you've created a new "Project", is there an easy way to get all
existing emails from a folder with a specific subject to be added to the
emails tab of the project? Since the emails and projects views are separate,
I can't figure out how to drag from one section to the other. Am I missing
something simple?

Select the folder and enter the specific subject in the filter textbox just
below the Projects button in the upper right corner; that way, Entourage
will show you only the messages with the subject you've specified. Now
select all the messages, then click on the Projects button and assign them
to a specific project.
For future emails, you can also create a rule (Tools>Rules); set the
condition to "If subject contains", and as the corresponding action, choose
Set Project and then select the appropriate project. If anything's unclear,
post back.
