Is there a way to delete all events older than a certain date from the
Exchange server? The only way I can see to delete events is one by one.

It IS absurd that Calendar event custom views don't allow for dates in the
past in criteria. But they do sort by Date, which is good enough. You could
even do it the built-in All Events custom view, but you should surely make
an exception for recurring events (which are listed only by first date),
since they may still be ongoing, like birthdays.

So make a new Custom View (File/New/Custom View) for

Item types:
? Calendar events [only]

Location:
<This calendar> <Calendar (Exchange Name)>

Criteria:
<Recurrence> <Is> <None>

Sort by Date column, shift-click top and bottom items of the events you want
to delete, and Delete.

You could make another view for recurring events. and pick and choose among
them with command-click, then delete. There's no way to specify "Last
occurrence is equal to or greater than 1 day from now", which would be nice.

If you go to Preferences | Calendar there is an option to delete
non-recurring events older than x days.
