Can I change the default columns & grouping that show up for mail
folders?

Yes, I know that I can change each one and it will store my settings.
But individually changing over 50 folders is a pain; furthermore,
upgrades and other activities sometimes reset the column view to the
default.

I'm no stranger to Unix, and I'm willing to muck about in strange
preferences files if I can find them. Can anybody give me any tips?

Sorry - it seems I wasn't clear enough. I want to change the default
columns & groupings that show up in IMAP mail folders displayed via
Entourage.

Clicking on an IMAP folder in Entourage displays the messages in that
folder (in a separate pane from the folder list). I want to change the
default columns & groupings in the Entourage pane that displays the
messages in a folder.

The tip above is for setting folder defaults in Finder. I'm interested
in changing them for Entourage. (Not related to Finder at all.)
