Two methods that work equally well for both issues:
1. use a mail rule under the incoming or outgoing mail rules pane, create
a rule to assign mail to/from those people to a particular project. You can
extend the simple 'from contains xyz' type of rule by using categories to
make broader catch-all rules
2. assign the contacts in the address book to a project, then, open the
project properties dialog (right or control-click on the project title in
the listing of projects, and select 'properties'. Switch to the 'maintain'
pane and check the box to 'Associate mail form project contacts'. Now every
mail to or from a contact in the project will be automatically associated
with the project as well.
