These are more commonly called hyperlinks, by the way.
Anyhow, if you want to show text like " Click *here* " and have the *here*
send people to a URL, that is not built into Entourage. You can, however,
use one of these workarounds:
1) Entourage 2004 only: compose the message entirely in Word and use File |
Send to... As HTML.
2) Entourage X or 2004: a free script by Paul Berkowitz:

Less fancy option, that shows the full text of the URL:
If you type or paste in a complete URL that begins with
http://, it will be
a clickable link when it gets to the other end. It will not look like a
clickable link while you are composing the message, however, because who
wants to accidentally trigger links while writing a message? You can save
the message to Drafts and look in the preview pane, though, and you see that
it is a clickable link.
