What build target should I use for Windows XP 64 in 3790.1830 DDK? What
about WDK 6000?

For DDK 3790.1830 use the Win2003 x64 build target. I'd use the same for
WDK6000.

Here's a little clue: Microsoft never actually built a 64-bit version of
XP. The product that is marketed as Windows XP 64 is really Windows 2003
Server 64-bit with a new label.

So, in general, pretending you have Win 2003 is a good plan.
