Is it possible to uninstall an IM driver for only one NIC if you have two or
more in the system ?

Well, in 2K/XP/2K3, you can unload the IM driver on a per-NIC basis. Go
into the NIC's properties dialog, look for your IM driver in the "This
connection uses the following items" list, and uncheck it. That'll unload
the IM driver from that NIC's stack.

all devices.

This most probably only works for IMs that do not use their associated
Notify Object to disallow their protocol from getting unbound. I guess
that is usually true for MUX IMs while Filter IMs allow to get unbound
manually (e.g. the Packet Scheduler).

Mine is a filter driver with no Notify Object so it should work. I've tested
it and it looks ok :)
