I'm evaluating CRM 3.0 for a financial service company. We have no need
whatsoever for the product catalog and the "hard product" way CRM 3.0 comes
out of the box.

I saw some screen shots of a SBE CRM with a wizard offering a template for a
Financial Service industry. Does that remove the usage of the "product" as
required for a opportunity/sale?

If so how can I use that? If NOT how do I make CRM do what I need it to
instead of forcing me to sell widgets when I have no widgets to sell nor
price.

You don't need to use opportunity products when you create and track an
opportunity. You might consider using a Sales Process workflow rule however
to enforce your sales process.
