I would like to create some custom reports that show user activity such as
actually using CRM, time spent in product, keystrokes etc. I have gone
through all the entities and attributes but can't seem to identify anything
that looks promising. I'm guessing the type of info I am looking for would
be server side but I don't have access. Anybody have some insight they could
share?

There are some 3rd-party applications out there that will help you audit CRM
activity, such as c360's (http://www.c360.com/Audit.aspx)
