Currently when I assign ownership of a record it automatically shares the
record back with the original owner. Is there a way to "unshare" multiple
records at one time instead of opening each record indivdually and undoing
the sharing rule?

I don't know off the top of my head of any supported way of bulk
unshare of records.

To stop the automatic sharing of records back to the original owner,
there is a setting, from memory in settings - org settings to toggle
sharing objects back with their original owner when they get assigned.
That would resolve the problem for the future.
