We have users in both the Central and Eastern Timezones which I can't think
it an unusual situation. The problem is that date fields set in the eastern
timezone appear a day earlier when looked at in the Central Timezone. For
example 10/25 will appear 10/24. How can this be corrected?

This is default behaviour as I know,

can you please check settings >> orgnaization setting >> System Settings >>
Time zone for date and time.

Has each user set their time zone setting in the CRM (tools-->options)? The
date/times in the CRM are stored in UTC time, so at this time of year
central is UTC minus 6 hours and eastern is UTC minus 5 hours.

So if an appointment that happens at 10am Central is created by the user in
the Central time zone, it will be stored in the database as 16:00UTC. so
that if the user in the Eastern time zone then views that same appointment,
the CRM comverts it to eastern, and shows it at 11am Eastern, which is
correct.

It's important to make sure all your users have the correct time zone before
they start using the CRM, or else data items that they create will get
stored with the wrong UTC, and then they will appear wrong for everyone who
has the correct time zone settings.
