I understand that email are promoted as CRM activities when they come over
from Outlook. What is the status of the email activity when it comes into
CRM....is it going to show up as an "Open" activity?

Emails coming in to CRM are always closed. The only time an email in CRM is
open is when a user is composing it and has not yet hit the "Send" button on
the email form. So a user could save the email he's writing and not send it,
and it will be open.
