As a regular user of CRM systems, there are some things I really like about
3.0. One bugbear however is the lack of ability to Complete an activity task
and create a Follow Up activity easily - am I missing something?

There's a "Follow Up" button near the top of the activity window. Makes sure
the activity record is saved first to see it.

if it is related to an entity like account, check out the tool bar for
the "follow up" button and use that to first create your initial
activity then your follow up. just be sure to use save and open so you
can save and complete the first activity.
