Is this true.

If you remove CRM GUID from e-mail subject CRM E-mail connector doesn't
catch replay e-mails from
outside to CRM database.

Yes this is correct. The guid is needed to map the email to the originating
CRM object

Once you click Promote Email to CRM Activity for an=20
individal, CRM will catch the email that come through for=20
that individual every time after that.=20

Ivica,

The GUID is used to determine the object (Contact, Opportunity, Case,
etc) that the orginal email was attched to. If the GUID is not used,
then the reply won't be attached to that object. If the user has
their profile set to put all email into CRM, then the email will still
be caught, but it will be associated with the Contact or Account
record that has that email address.

So, it could be caught, but it won't work the way most people would
like it to.
