I've been reading that a customer can send an email and have a case created
and receive an email response back with the case information. We setup a
queue and can email into the queue, but cannot figure out how to email
directly in to create a case. Does anyone know how to do this or where it
is referenced in the documentation?

There is no support to automatically create a case from an inbound email. c360
has an add-on app that will do some of this. Otherwise, you are faced with
manaully creating the case.
